i'll start
cinnamon crisp sandwitchs.
the cookie
1 3/4 cups floor
1 tsp ground cinnamnon
1/4 tsp salt
3/4 cup butter
1/3 cup suger
1/3 cup brown suger
1 egg
1 tsp vanilla
1/2 cup roates and choped pecans.
basic creaming method. chill for 30 mins, roll into 2" diamter long, roll in the pecans, chill over night in plastic wrap.
cut into 1/4" slices, place on a ungreased cookie sheet, cook for 10-12 mins at 350.
Now the filling
spiked whipped cream
1 cup heavy cream
1 teaspoon vanilla
1table spoon powder suger
1 oz of either a drak spiced rum or burbon.
use either a piping bag or a teaspoon to add about 1/2 teaspoon of your whiped cream onto the cooled cookies top with another cookie.
you should make about 2 dozen or so.

Chocolate chip oatmeal cookies
Ingredients
1 cup butter, softened
1 cup packed light brown sugar
1/2 cup white sugar
2 eggs
2 teaspoons vanilla extract
1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1 teaspoon salt
3 cups quick-cooking oats
1 cup chopped walnuts
1 cup semisweet chocolate chips
Directions
Preheat the oven to 325 degrees F (165 degrees C).
In a large bowl, cream together the butter, brown sugar, and white sugar until smooth. Beat in eggs one at a time, then stir in vanilla. Combine the flour, baking soda, and salt; stir into the creamed mixture until just blended. Mix in the quick oats, walnuts, and chocolate chips. Drop by heaping spoonfuls onto ungreased baking sheets.
Bake for 12 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Personally, I ditch the walnuts and just put the whole bag of choclate chips in...
