this one is my Grandmothers one and I have been having it since I was 3 ( with the Brandy sauce) ;D
we normally doubled the recipe though to make a larger or 2 puddings
Ingredients
250 g Plain Flour
250 g S.R Flour
500 g Suet (tandaco)
500 g Raisins
500g Sultanas
500 g Currants
1 Small Grated Carrot
1 Small Grated Green apple
250g Mixed Peel
1 Tablespoon Cinnamon
1 Teaspoon Ginger
1 Teaspoon Nutmeg
250 g Brown sugar
250 g White sugar
2 cups Bread Crumbs (Fresh)
½ Wine Glass Brandy
½ Teaspoon Carb Soda in ½ cup Milk
8 eggs
Method
Mix altogether & put in a cloth or a basin that’s covered and rubbed in with plain flour tie well. Never let water off the boil steam for 5 to 6 hours
(if putting in a pudding basin grease and flour it )
Christmas Pudding Brandy Sauce
Ingredients
1 Pkt Instant Pudding
½ Pint Cream
1 cup Milk
1 Glass Brandy
¼ Teaspoon Nutmeg
Method
Make up instant pudding and milk then cream and the other ingredients

love me a good Christmas pud. That's pretty much the way my sainted Geordie mother used to make it but she'd do it about mid October them let them sit in a cold pantry until Christmas to get all those flavours melded just right. I needing to go for a jog just thinkin' about it :) MP
p.s where in Oz are you? I have a sister in somewhere called Mount Glorious QLD.
