Title: Baked Cheese Grits

Baked Cheese Grits

 
 You will need:
A bunch of bacon..fried crisp.and crumbled
Set aside about 1/4 cup of bacon grease 

4 cups water
1 1/2 teaspoon salt
1 cup quick grits (not instant)
American cheese ( I use about 10-14 slices) *individ. taste*
*Do not use Velvetta*
1 heaping cup grated cheddar cheese

Mix 1/4 cup bacon grease, water, and salt in a heavy saucepan over medium heat.

When mixture comes to a simmering boil, add the grits, stirring (with whisk) until thoroughly combined.

Cover and cook the grits at a simmer, stirring frequently, until they are thickened.( like hot cereal) ( about 15 minutes.)


Take out about a cup of the grits
Whisk together egg, and stir into the cup of cooked grits. Then add that cup of mixture back into the whole mixture and beat together. ( it mixes better this way)
 
Add the Bacon and the American cheese and stir until melted.
Mix this in the grits while warm so it will melt.
 Pour mixture into a really well buttered dish.

Sprinkle all over the top with the grated Cheddar cheese

Do not cover.

Bake until set, about 30-40 minutes. at 350.

Remove from the oven and let stand about 10 minutes before serving.

(If you want...you can add to your mixture, jalapeno's, garlic, red pepper, salsa..whatever
