I love these things!
4 red or green bell peppers
1 lb. Ground beef or sausage
1 cup white rice
1 can Rotel tomatoes
2 cans tomato soup
small sweet onion
1 jalapeno pepper
fresh garlic
motzzerella cheese
Cut the lids off your peppers and toss the stem.
I choose to roast my peppers on the grill. (boiling works) Until tender
In the mean time, chop your onion, jalapeno, and garlic. Combine in your pan while browning your beef or sausage.
Get your rice started. Open the rotel tomatoes and drain the excess liquid.
Once your meat is done, drain the grease, and combine rice rotel tomatoes, tomato soup and your meat. Stir until even consistency.
Now in a baking dish set up your bell peppers and start scooping your concoction into them.
Top everything off with the cheese and toss in a 350 degree oven for about 20-30 min.

I will try your recipe, stuffed bell peppers have always been a treat, sometimes I use ground pork or turkey, it all works. I have not used any kind of cheese yet, sound like a no brainer, yum. ;D

Funny thing is that there is only one thing I don't like about Stuffed Peppers, The Peppers ;D
I don't even dislike Bell peppers, it just seems to be to much Bell pepper.
So I eat the stuffing and toss the pepper ;D
