Title: Bison and Asparagus..

Grilled bison sirloin tonight with a mesquite rub to medium rare with some grilled asparagus on a bed of rice pilaf.

No need to make a recipe, use your own judgment!  It's meat on the grill, if you don't know how then learn!   :o

Delightful...with an ice cold Guinness Extra Stout!

Didn't know they had bison in MA! Or aspergas either, for that matter!

Two 6 oz top sirloin at the market for about 10 bucks.  It's not the best but it's better than nothing...needs to be on the rare side of medium rare.  Same company sells 1 lb burger for about 8 bucks!  Both in fresh vacuum packs that are good for a couple of weeks without freezing.

Blackwing and Jackson Hole Buffalo are good sources for us easterners as well!

Actually, it's much lower in calories, cholesterol, saturated fat and has more nutritional value than beef, hands down! 

It's just a bit pricey but the flavor is better in my opinion!

Look into grass fed beef.   It has all the same benefits of bison and for the same reason.  It is raised on it's natural diet rather than grain fed.

Also a bit pricey but anything at Whole Foods is anyway!  Our local WF (40 miles) has an aging refer as well but it really brings the price up dramatically!  If you can afford it and can get over the hairy hippie chicks that mingle through the store....

Were knee deep in 10 lb chunks of tuna 'round here! 2 inch thick steaks on the grille! Mmmmm...sorry Charlie.
