I am in the process of setting up for Truck Guns. Living in Minnesota I am faced with the issue of the guns needing to be cased at all times, but I still need them readily accessible.
First: I have my Permit To Carry A Pistol (required by Minnesota law to carry any firearm). This does allow me to carry firearms uncased in the vehicle, but a long gun in the back window rack, like we did in the 70's, is just asking for confrontations. I hate the anti open carry, but I am against it because of the social issues it causes for us all;
Second: I will (do) have my handgun in a mounted holster for easy access, and I do have plans for the long gun racks;
Third: This is needed for a combination of pest and varmint control, and livestock euthinising (killing critters - easier to spell than the e word).
After a bit I will share my set up, but I would love to see some sharing and discussion of your thoughts.

breathable rifle scabbard with open butt end mounted horizontally on back of seat... slight downward mounting of muzzle to keep rifle in place... worked well for a Savage 24C in an old LUV truck...

I have a Big Sky gun rack mounted just back of my head in the truck. Very easy to grab a long gun while sitting down. I added a lock to mine. You can not see the gun if the windows are tinted even a little.

I recall seeing a set of seat covers that included a rifle sleeve behind the seat but I haven't found it online.
