It's been a month and a half since you canned the Horseradish Pickles. Have you tried them yet? How have they turned out?

After you mentioned that you were canning pickles with Horseradish, I found out my mother-in-law was canning so I had he go out and dig up some of my HR and add some to a jar for me. Living overseas I don't get the chance to can anything. I'll be able to try that when I get back home in Minot, ND in Jan 2009

Last time the wife and I canned was in 1993 and we canned 137 pints of salsa. Oh boy were they good. It lasted our family about a year. We also canned a lot of pickles and put a Jalapeno chili's in with the cuc's and that turned out nice and spicy.

Speaking of recipies ...

Haz, I come to you on bended knees (not an easy task the way I've cared for this body) and red of face  :-[ 

I only made one copy of the Hazaritta recipe ... they were great ... really great  :D, and somewhere through the evening it got lost or stolen or burnt or uses for .......... can anyone say shitfaced :D  It was a good day!

Anyway ... I need more, and I can't find the thread you gave it to me on.

Please help me out.  I've got the taquilla, beer, lime concentrate, and ice, but I can't remember anything beyond that.  Damn it was a good golf outting.  I had the fixin's, another cart had the blender, and there are about a dozen of us that don't know if we played one hole or twenty-seven.  We have heard a few good stories though  ;D

PLEASE, PLEASE, PLEASE SHARE AGAIN ... THAT STUFF IS ADDICTING

6oz of frozen Lime Aid concentrate.  Do not mix … just take the 6oz. and dump it in a blender

6oz. of your favorite tequila

6oz. of beer (pilsners or “light” beers work best)

3oz. of really cheap white wine

Add ice and blend (Taste great “on the rocks”.  However, keep in mind that they are a little more powerful given the lack of blended ice) 

DO NOT handle firearms, fly airplanes or operate machinery heavier than your blender.  To that, after three pitchers I sincerely recommend that you don't operate anything that runs on electricity. After five pitchers, you will be functionally illiterate.
DO NOT make any attempt to sing or dance because you will look pathetically stupid doing such.
DO NOT call me for bail money.

They're pretty good!

I cracked one of the bottles with chili peppers in it, and it rocks (and is not too hot)...

I made pickled eggs for the first time ever for Labor Day weekend. I didn't go on vaction because something came up, so I stayed home and ate them by myself. They turned out even better than I expected, and went great with the 3 pounds of jerky I made. Yummm.

The only thing missing from that combo platter is a case of Old Milwaukee, a bottle of Pepto Bismol, and a box fan.... :o ;D ;D ;D

2 dozen hard boiled eggs

2 jars of pickled beets

drain the juice off the beets into a pan, match the amount with vinegar (white), add maybe a teaspoon of sugar, some pepper corns and a couple cloves of garlic.  Heat this on the stove.  Place eggs and beets in a large jar (one of those plastic pretzel jars works well).  Once the mixture is hot dump on the eggs.  Make sure all eggs are covered.  If you need to just add more vinegar.

Now here is the HARD part.

Put the lid on, place in the fridge and DON'T TOUCH for at least 3 days.

Enjoy.

Take a fork and while the eggs are still hot.. poke some holes in the eggs. That helps soak the juice up in them and pickles them even more. Be careful that you don't break the egg apart when you do this. push the fork ( or an ice pick) in the egg and gently remove and do it again..  . I do it about 4 times per egg.
 I also add a few cut up  jalapenos to my heated mixture.  I have HUGE jar of them that have been in the fridge for about 6 months.. They are soooo good. I took some of them out and sliced them in an egg slicer and added them to a big relish plate that I had made.. They were gone..but so was everything else.. ( and it was a BIG relish tray  ::) ) so compliments to the chef I guess.

Those ones at Sam's have to be doctored up quite a bit.. Take them out.. and take the juice .. and put it in a pan and then add a bunch of stuff too it ( like Haz's recipe). They are really good then.

 GOOD pickled eggs are not pink!  They are a nice, deep purple   (which would make a good name for a rock band ;) )

I looked online for pickeled egg recipes and found a ton, then ignored them all and did it my way. I started with the leftover juice from our locally made Kogels Red Hot pickled bologna (weiners?) then added some more spices and plenty of beet juice. The Red Hots originally had bay leaves and red chile peppers and I have no idea what else for spice, but beet juice and more peppers is all it really needs to make Deep Purple eggs that make your mouth water just thinking about them. I had some minced onion in the cupboard and emptied that into the jar. I bought a one pound jar of hot chile peppers and instead of dicing or mashing and only using one chile as in a recipe I saw, I used the whole jar full. I put it in the jar with some boiled eggs without heating it. After a few days in the fridge I had the best pickled eggs I ever tasted. I gave my mom a couple and she liked them too. After a week they were even better and hot enough to make my lips tingle after I ate them. I finished them Labor Day but the juice is still in the fridge ready for more eggs.

The beet juice makes them look good. Just leave it out and they'll still taste good.
