I picked one up a couple of months ago in .223, it's a fun shooter, anybody else got one... ;D

not me , but I believe one of our members on packing 4 life has a post about it. seems like a quality weapon.

I looked at the tapco website and I'm wondering if you could put a collaspeable stock on one with a pistol grip...

These Saiga's have my interest as well. If the quality and accuracy are solid it's hard to ignore the price. If the build quality is good the only downside for me is the Saiga specific mags as I don't think they take standard AK mags. Here is the best tutorial on restoring the neutered Saiga to it's original state as intended by Mikhail Kalashnikov.  I did one myself in 7.62x39 and it was a lot of fun to do.

One can adapt the 7.62x39 to accept AK mags. I think there is an insert you can install to make this happen or something.

Also, I am told one can adapt the 223 Saiga to accept Galil mags.

Personally, I'm interested in making up a 308 Saiga. The options regarding high caps for this caliber, however, is somewhat limited.

Well that's one less reason to not buy one then. Thanks for the info. What about about .223?
