How do you take yours?
Being from a Navy family, we tend to like to chew our coffee but as I've aged, so have my tastes.
I use a coffee press and I buy whole bean and grind (coarse) it right before I brew. Nothing fancy in my bean, I find that if it's fresh, it's more about the technique than the brand. I've been using 8 O'Clock lately, it's cheap and taste darn good when done right.
The coffee press (some called it a French press but I don't trust the French) leaves all the essential oils in the brew giving the coffee a very thick, robust flavor and you can really taste the difference over a filtered brew....they cost between fifteen and thirty bucks depending on the size and well worth the money. I stopped buying OTC coffee from the chains years ago, just not the same....
-
Tim,
I'm a bit of a coffee snob ;) , too.
Gotta be fresh ground beans (grind 'em your self is the only way). CLEAN the damn pot between brews.
8 o'clock is good. Right now I am buying at GFS and using either 100% columbian or Italian roast.
Usually make it in a regular drip type but French press is good. My GF bitches if I do it that way cause she read somewhere that 'press' type coffe is the worst for you in terms of cancer (don't ask me, just tellin' ya what she says ::) ).
I drink 2 to 3 pots (12 cup pots) a day).
-
I like my coffee like I like my women strong and sweet. 8)

Try these guys as a special treat:

We have a guy here that opened a Roaster that has pretty good coffee. He has beans sent in from all over and roasts it himself 2-3 times a week. www.coffeequarter.com Former Navy and works for NAVAIR during the day.

I'm not a coffee snob, at home I drink black instant decaf, if I'm out I have cream and sugar, regular before 3 pm decaf after.
-
I don't think of myself as a snob for coffee othewise I'd buy that overpriced bean that a south American cat shit's out after eating it... ;D
I just find interest in the science of the brew. Temperature, timing, flavor on the weekends because I have the time and the weak, nasty, Bunn-O-Matic stuff that taste like warm, bitter piss during the week...except for the one I leave the house with in the am...
No sugar for me but a dab of cream will do (no half'n half). I don't drink as much as I used to Haz. I too could drink two pots daily years ago but now I don't have the bladder for it. No wonder your still posting threads in the middle of the night.
Decaf is like light beer to me, don't see the point of it..... :P

Thomas! You have to back away from the dark side! Come to the full flavor of fresh roasted and ground beans. ;D

A topic a really enjoy.....how to brew a great cup of coffee.
There are many views and feelings on this subject, but there are several ways that most agree produce the ideal cup of coffee. Aside from making sure the beans are freshly ground and of great quality, I prefer Arabica, the real key is attaining the proper temperature of your water. The ideal brewing temperature is 200 degrees and the problem is it is very difficult to attain this temperature level with traditional coffee makers. Many like the French Press method while many experts argue that the Chemex method produces the finest tasting coffee (essentially a large glass decanter with wooden ring and a drip method) that has been around since the 30's if I recall.
For me, I like a simple drip method or French Press, but I can tell you that the only two coffee makers that I have found that attain the proper 200 degree brewing temperature are the Bunn Commercial models and Technivorm machines made in the Netherlands. I have had the good fortune of owning a Bunn Commercial Pour O Matic machine since 1991 that has been an absolute joy to own. Perfect cup of coffee that, coupled with a thermal carafe, allows you to enjoy your coffee for hours without burning it on your hot plate.
The Technivorm is generally considered, by true coffee aficionados, to be the finest coffee maker in the world. It is commercial quality and brews a 200 degree cup of coffee and deposits it into a thermal carafe. If my Bunn ever breaks down, I've probably jinxed it now, I wouldn't hesitate to to get a Technivorm......or maybe another Bunn...... :)
Here are the links to Technivorm's site in Holland as well as a site for the US distributor......for those aficionados out there. I've also included the link to the Bunn Commercial Pour O Matic machines which REALLY work. The key is don't let it burn on the hotplate and learn to use a thermal carafe and shut off the plate as soon as the coffee is finished brewing.
For those of you who like instant, this isn't for you..... ;)

I'll stick to tea, a true gentlemans drink. ;)

Do you want me to tell you the secrets to making a truly great tea, the old fashioned British way from years ago, not the way most do it now? Don't get me started...... :D

It was worse that that, Tim. He said INSTANT decaf. :o
OH MY! I missed that! Brings back memories of my dear old Ma & Pa and the nasty freeze dried Folgers crap of the 60's & 70's.... :P
Dear old Dad, Chief Boiler Maker EJ Bevins, USN (Ret) could drink about fifteen gallons of that nastified watered down goat pee every day and sleep like he was rocking on the South Pacific waves!
CDR....I make my coffee one or two cups at a time so the press works for me. Besides, 300 bucks for a coffee maker could be put to better use at the range! ;D Your absolutely spot on the temperature though, the other thing that people make the mistake with is, you should always use MORE coffee than LESS to get a robust, flavorful brew!
-
It was worse that that, Tim. He said INSTANT decaf. :o
Thomas! You have to back away from the dark side! Come to the full flavor of fresh roasted and ground beans. ;D
I don't drink much of it, I've had the same jar for almost 2 years ;D I enjoy REAL coffee when I'm out but at home I usually stick with water, I drink the decaf when I want something hot at home in the winter that won't keep me awake. All I'll say about it is it's better than chicken bullion or hot water.
-
In addition to fine coffee, My wife (who is a REAL coffee snob), is also a water snob. I haven't used tap water for coffee in years.
This Whole Foods spiritual glacier, mineral spring water, or any other decent water makes a difference in the coffee flavor.
I just enjoy a Dark French Roast, bought whole bean and grind before every pot, little sugar. My wife still has this little Melitta antique coffee carafe, where you heat water and pour through a good filter, and presto. Instant foglifter.
Although the best coffee I ever had was using the spring water from the Uhwarrie National Forest in central NC. Before every camping trip we would fill our jugs and cantines at the spring. Than use the perkolator by the fire. That was some good coffee, especially when a tiny bit of good whiskey was added.
I think that water could make instant taste better. :P
But NOT instant decaf.....Good Lord! That stuff reheated in a microwave will cause brain damage.
-
CLEAN the damn pot between brews.
:o
Absolute Heresy! Not with soap I hope......The Horror!
It's about perfect when a penny tossed in the pot floats on the surface.
Most of what I drink is Dark Roast (or Darker) out of a drip maker with a little salt on the Grounds.
I much prefer Coffee out of a Percolator.
Stuff that comes from a drive thru usually isn't suitable for putting out a grass fire.
At least one pot a day. I can polish off half a pot and go to bed, has never bothered me.

Sounds like what I used to drink in the Army. Mermite can sittin on a Herman Nelson heater for days. Every so often toss in a handful of grounds and some more water.
My taste has become 'more refined' ::) since then. ;D

A story from my Navy days,
I was working a midwatch in CA and noticed that the Command Master Chief had left his coffee cup near the coffee mess on the operations floor. I don’t remember his name but he was a rather short, angry little fellow and though he may have been no more than 35 years old, he seamed to me, a 21 year old kid, to be about 100 and far past the mandatory retirement age. Anyway, we didn’t get along very well and in retrospect, I understand why. I was an angry, fed up, short timer with a healthy attitude and disdain for anyone in authority. I’ve read my evaluations on numerous occasions over the years and they tell a similar story.
Anyway back to the coffee cup. It was a rather boring mid watch, typical for CVB and with boredom comes mischief, and being the mischievous type, I gathered an accomplice for a lookout and grabbed the Chiefs cup. It was one of those heavy Navy mugs, white with a loop handle and the inside was caked with at least a ¼ inch of residue. The chief said it added to the flavor and he probably never washed it. Well, I took it into the head and scraped and cleaned that mug until it was spotless and returned it to the spot where I’d found it.
The morning came, and with it, the Command authority for the morning brief. By then, most of the watch section was aware of the crime and waited anxiously for the CMC to arrive. He came through the cypher lock door, straight to the mess table and picked up his cup. It took a second or so but the realization that his morning cup of coffee would never taste the same took hold in him and he turned and glared at those of us brave enough to return his stare. He then promptly shattered the cup in the nearby trash can and walked over for the morning brief.
If I could go back thirty years and take it all back I would! But, if the cup was still there when I started my second mid watch, “Who knows what evil lurks in the hearts of men?"......
;D

Wings of the Morning Kona Coffee is the best ever, but expensive at $25/lb.
But it is SO worth it!

You are a cuel, cruel, man, to mess with someone's coffee. Its like stealing their horse. ;D
Me I agree on the french press. The cool thing is that REI makes them in lexan so they're perfect for camping. Boil water and you're in business (are you listening Tom, you poor savage). I would HIGHLY reccomend Peets coffee out of San Fran. Their Sumatran is the best coffee going, dark, rich and nutty (anyone making an Obama joke will be castrated as, much like the Master Chief I don't like anyone messing with my coffee) . They are too expensive for every day, but god its good stuff, leaves an oil slick like the Valdez on the top of the cup.
Hot and sweet was also mentioned. For that we turn to cafe Cubano. The Bialleti esspresso maker (or one of a hundred just like it) is the key. None of the zillon dolar electric models are required. This is just a heavy aluminium carafe with a resevoir and filter below it. You fill the resevoir with water, the filter with coffee and set it on a burner, and as it boils the water (now coffee) is forced up into the carafe. Again great for camping. For you yankees, a good cafe cubano is made thusly: 1/3 esspresso grounds loosely packed, +or - 1/3 sugar unpacked, and 1/3 esspreso on top. If you want to make a cafe con leche (latte) just pour it over ice with milk. Oddly, and happily, the best esspresso coffee I've found is as cheap as dirt. I don't know if it avaiable outside of Florida, but look. The company is called Pillon and it comes in a red and yellow vacum seled bag for like $3.
happy brewing

I'll stick to tea, a true Gentlemans drink. ;)
I'm with You 1911Junkie
I never have acquired a taste for coffee and since I saw what happened when coffee drinkers didn't get their morning cup(cups?) I figured Tea was the way to go.

Don't know for sure but I believe that there is more caffeine in tea by volume, than coffee....
I DO know that the longer you roast a coffee bean, the LESS caffeine it has...
-
I was raised in a "TEA" drinking family - English - and never acquired a taste for coffee or tea. Used to drink 2 + cans of Pepsi a day to get my caffeine. Not a coffee snob just a snob!!!!!

I drink about 1 pot a year.
My wife used to drink about 4 pots a day, but is down to about 2........ no sugar, just light cream.
Sweet tea is the un-leaded drink of choice.

That sounds like the 'coffee' they had in the vending machines at work. I worked graveyard shift for 15 years and sometimes when it got really cold I would drink the occasional cup.
We called it "screen-door coffee"...because after one cup, you could crap through a screen door standing up.
Bad I tell ya....bad stuff...tasted like they used an old sock for a filter. :-X

Yup, they had some of that nastiness too!
It's really ironic that I live in the birthplace of Dunkin Donuts, in fact New Englanders navigate by store locations... ;D
"Sure, I know O'Malley's, ya go down past the church at thaa corna' and hang a right at Dunkin, ya caaaaan't miss it, it's a wicked pissa of a baaa!"
I just can't drink the stuff.... :P

I like White Castle's coffee. The way the brew it, it caught my attention. But when I bought a bag to brew at home, it just got better. It's pretty cheap at $5 a bag (13 oz for whatever reason), but I think it's a value coffee.
-

My mom drank Taster's Choice as well, but my aunt swore by Maxim Freeze Dried Crystals.....both were quite vile really. Whenever my aunt came over to visit they would argue about the coffee, like there was a difference. That's when we broke out the Corning Ware stove top or Faberware electric percolator for some real coffee. I think it was Hills Bros. and Saverin that were my mom's go to alternatives.

I mostly drink ice coffee and only drink farmers union
(http://johnnymestizo.com/wp-content/uploads/2008/05/farmers-union-300x102.jpg)
Australians consumed in excess of 22,000,000 litres of Farmer's Union Iced coffee, making it Australia's best selling flavoured milk drink/milk shake at that time.
Farmers Union Iced Coffee outsells Coca-Cola in South Australia, making it the only place in the world where a milk drink outsells a cola product, and one of the few places where Coca-Cola is not the most popular locally consumed bottled beverage ;D

The first step to a good cup of coffee is using filtered water or bottled water. Following this dictum, you will have a decent cup regardless of how you make it or what type of coffee you like to use.

These are clearly people that need to be separated from their money, because left to their own devices, they are clearly a danger to themselves and others. I hope the "waiter" got to keep his tips. This proves that PT Barnum was right when he saiad that no one ever went broke over estimating the stupidity of the American people. Sad, but true.

Years ago I LIVED on Dunkins coffee ;D The absolute WORST coffee is McDonalds
Back when I was a student, a year or two ago, I went to McDonald's at 3am for coffee. And honestly, it was great, one of the best I'd had in a while. Went back six hours later and got the worst cup ever, three sips and down the sink. But the worst is them automatic coffee makers, you know, one cup at a time, the little prepackaged things in the half n half cups. I could have swore someone spiked it with bore solvent every time.

There, fixed it for ya! ;D
Same here. As a kid, I used to go to A&P with Mom (too young to have a choice, actually) and I loved stopping by the 8 o'clock grinder. Man, that was the greatest smell in the world. My folks would never let me drink it though, until I got older. When I was finally allowed to drink coffee, my first thought was - that great smelling stuff made this crap? Yuck!
The I discovered I don't really like hot liquids at all - chocolate (great taste once it cools down), soup, you name it - hot liquid - no.

Yep, same here....great aroma, bad taste.
I usually eat soup way after everyone else is done because I wait for it to cool down. My wife can pour a cup of coffee, and it's hot enough to scald the hair off a hog, and drink it like I would a cold beer. I can't do it.

Can't start the day without it!! Grinding the beans, is by far the best.
One cup just wont do it.. One pot a day, more in the winter ;D

I buy my coffee unroasted (green) and roast it. I use a Technivorn coffee maker, an Aeropress maker, similiar to French Press and a cheapo espresso maker, not much for espresso, make latte and Americano. I like the coffees from Central and South America, Ethiopia, Java. I have a home roaster and roast three or four different kinds of coffee at a roasting session and try different blends. Only go to Charbucks when on the road. There are a lot of good roasters out there that will send fresh roasted coffee, search on coffee roasters and try them. You'll stop using canned coffee. Not cheap.

Try to keep my coffee consumption to 3-4 cups a day. Like to get the fresh beans and do it myself, but usually can't justify the expense. (special treat, ammo is higher on the priority list) Little cream, no sugar, and pour it in my 32oz sippy cup, and out the door, hopefully headed to the range. ;D

You must be kin to my late father-in-law (see the .44 special thread section about his inclination for possum, and this might make sense).
He had my mother-in-law percolate his coffee the night before so it could "set-up" a little before he drank it the next morning.
It resembled burnt motor oil....about 40 weight.
I think I'd just rather drink Sterno.

My Dad worked out of the house, free-lance industrial designer. He had this big aluminum coffee percolator, 10-12 cups maybe? Here was his routine every morning:
1. Get up
2. Get dressed
3. Plug coffee pot in with left-over coffee from day before
4. Make toast
5. Tap off last cup, clean pot, set up and start brewing new batch
6. Take toast, day-old warmed up coffee to the dining room, have breakfast (coffee and toast), then a cigarette while new pot percolated
7. Drink all but 1 cup during the rest of the day
8. Next day, start over at #1

This brand is awesome... I usually buy 10 bags of different kinds each order..
They are dripping with oil when I grind them.. ( fresh every morning, of course)
Marshal's favorite is Hazelnut Creme and Butter Rum and Amaretto..and ..and.. and.... ;D ;D
He says that this brand of coffee has the best flavors he has ever had..
He drinks LOTS of strong strong strong coffee every day. I make him his evening coffee and it consists of some cappuccino powder, real cream.. mix that up real good.. then add hot coffee and then some of the spray whipped cream on top..
I know.. I spoil him... :)
But he is sooo worth it........

He drinks LOTS of strong strong strong coffee every day. I make him his evening coffee and it consists of some cappuccino powder, real cream.. mix that up real good.. then add hot coffee and then some of the spray whipped cream on top..
I know.. I spoil him... :)
But he is sooo worth it....
Did anyone else notice that too?

Nice!! Now we're talkin!! How do you like the Technivorm?
Love the Technivorn. Little bit more involved in making coffee but worth the effort. Next in line is the KitchenAid coffeemaker. Right now I have about 50Lbs of green coffee waiting to be roasted. Hint, if the coffee beans are dripping with oil, they are over roasted, read almost burnt. At that point, most coffees will have lost their natural flavor. Each coffee bean is different, some better at light roast, some better at darker. I generally roast mine to before oil starts coming out. Beans will "crack" twice while roasting, I normally stop between 1st and 2nd crack. It is easy to roast and you can make it as cheap or as expensive as you want. Go to www.greencoffee.coop and www. sweetmarias.com, excellent info on coffees and roasting.

I'm pretty basic - Just get me a can at the grocery store, make it strong and hot, and no flavors. Fresh ground is something I enjoy, but don't mess with. And, my favorite is boiled egg coffee from fresh ground. However, tomorrow morning it will be Folgers through the drip machine to get me going.
My doctor doesn't mess around on here so I can really admit that my favorite breakfast is started with the coffee, start frying some bacon in the skillet, slice up a potatoe in thin sticks and throw it in the bacon grease, slice up an onion and through that on the potato, as the taters are near done you push them all to one side and put the bacon on top, then put some eggs in to fry. That, a couple slices of toast and hot egg coffee and I'm ready for the day ;D

M58, I'm drooling and my arteries are hardening just from reading that but what is "egg Coffee" ?
-
Ingredients:
1 egg
1 cup cold water, divided
1 cup regular grind coffee
6 cups boiling water
Directions:
Use a graniteware coffee pot. Wash egg; break it; reserve shell and beat slightly. Add 1/2 cup cold water and the 1 cup coffee. Add crushed egg shell. Mix thoroughly. Turn into coffee pot; pour on boiling water, and stir. The spout of the pot shoul be stuffed with soft paper to prevent escape of the fragrant aroma. Place on front of range and boil 3 minutes. If not boiled, coffee is cloudy. If boiled too long, too much tannic acid is developed. Add remaining 1/2 cup cold water; which perfects clearing. Cold water, which is heavier than hot, sinks to the bottom and carries the grounds with it. Serve at once.
Don't ask why.....it's a midwest thing.....I think...
-
I'd heard of putting egg SHELLS or a pinch of salt in the grounds to remove bitterness, this is the first time I've heard of using the whole egg.
-
I grew up in the midwest and I remember it but I've never had coffee made that way.
It's like "coffee milk", until you've spent time in New England, you don't know what it is...

"Lutheran Church Ladies!"
I'm told that the main reason for the egg is to hold the grounds together and keep them out of the cup. However, you can tell a difference in the taste as well.
-
I saw something about egg coffee in an article about camping. They said egg makes the grounds settle to the bottom of the pot. I thought people only did that when they didn't have a coffee maker. Like when you're in the middle of the woods.

A story from my Navy days,
You NEVER!! EVER!!! clean The Chief's coffee cup. I know Chief's that never drank coffee until after Initiaition and would rather die than drink out of a clean cup underway. Of course the same person wouldn't think of using a dirty cup on the beach though.
I will drink coffee or tea with or without cream/sugar (or honey for the tea)

What part about mischievous or short timer did you not understand! ;D

It's of Swedish-American origin.......Swedish Egg Coffee. Here's a couple of recipes and a forum discussion about egg coffee.

There, fixed it for ya! ;D
Same here. As a kid, I used to go to A&P with Mom (too young to have a choice, actually) and I loved stopping by the 8 o'clock grinder. ................
So did ya'll ever get that Spanish Bar Cake they used to sell? Mom and Dad would have a piece of cake when they drank coffee on the weekends.

I always have heard that the 'bitterness' comes from an unclean coffee maker. Heard it again on a news story just yesterday about a big coffee convention going on in Atlanta this weekend.

That's too much damn trouble for a cup of coffee............. ;D ;D ;D

I like my coffee strong, black, and bitter, just like my women. ;D JK.
I just finished half a pot of Gevalia Stockholm roast. It's halfway between regular and dark roast. Mmm. Most days by the time I get out of bed I figure it's too late for coffee, so it was the first time I had any coffee all month. I feel better than I did before. I may even get some work done today.

That last line ruined it for me!!! ;D

Reason coffee is bitter can be: dirty coffee maker, over roasted coffee, boiling coffee.
Reason coffee sinks to bottom of pot/cup: grounds get saturated with water and sink. Try putting boiling water in a cup and add 1 tablespoon of coffee and let it sit for about a minute or so. The grounds will rise to the top of the cup and then will sink when saturated with water.
Nothing like a cold morning on a hunt with coffee boiling in a pot over a camp fire. Adding sugar or milk to coffee is like ruining good whiskey with a mixer (coke or whatever).

I drink my coffee straight but not my liquor.
