Is it being "overly safe" to leave the chamber behind the hammer empty while carrying a revolver?

Depends on the revolver, if it has a transfer bar safety it is probably overkill.

In my case, yes! My little Ruger has a transfer bar that contacts the firing pin ONLY after the trigger is pulled. The hammer never contacts the pin, never. It contacts the transfer bar which in turn strikes the pin. You can hit the hammer WITH a hammer and it can't fire the round!
Older revolvers, you will have to wait for a different answer from some of the other guys as my revolver days are several decades in the past. I've only just fallen back in lust with the wheel guns. I don't want to give you bad information.

On any modern DA revo you can safely load 5/6 whatever. If you are talking about SA revos the Ruger w/transfer bar is safe to load with 6. Colt SA's load 1 skip 1 load 4 ease hammer down on empty chamber. Repro SA's I have no idea.
