Title: Cold weather food thread...

since its raining, I'll start


southern great northern beans

what you need:

1/2 lb salt pork( the good kind, where its 90% fat)
1 onion choped fine
3 cloves of garlic ( or more if your like me)
pepper
1 lb great northern beans soaked over night, or boil them hell out of them for 2 mins and let them soak for a hour



cut the salt pork in 1/2" cubes

cook them over med low heat until they render down and are nice and crispy, remove then from the pan. Use the rendered fat to sweat the onions and the garlic. add the beans, salt pork,  pepper and enough water to cover by about a inch. Bring to a boil, then reduce the heat to a simmer. Simmer the beans stiring every once in awhile for 90-120 mins or until the beans are tender and the onions have fallen apart.

will server 4, unless your like me and can't get enough, then it might server 2

1 can of Lucks Pinto Beans with onion
1 Sweet Corn Bread Mix

Make the corn bread. Heat the beans. Pile the beans over the corn bread. Eat everything on your plate.

Start with good stock, home made of course.  It can be beef, chicken, turkey, ham.

Add what ever you like and ENJOY!

Or better yet....

Ox tail soup.  It takes about 18 hours (no kidding) to make the stock but it is worth it!

Mix up a box of cornbread mix. Add a small can of diced jalepenos to it. Bake it and serve with butter. Goes great with bean soup.

Cans and boxes are convenient and save a lot of time. Plus you don't even need to know how to cook to follow the directions.

Mexican Cornbread

2 eggs
1/4 cup corn oil
1 cup buttermilk
1 1/2 cups shredded Cheddar cheese
1 (8 ounce) can cream-style corn
1 large onion, chopped
2 fresh jalapeno peppers, seeded and minced
1 cup cornmeal
1/2 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
 

..DIRECTIONS
1.Preheat oven to 350 degrees F (175 degrees C). Grease an 8 inch square baking dish or a cast iron skillet.
2.In a small bowl, beat eggs. Mix in corn oil and buttermilk. Stir in 1 cup shredded cheese, creamed corn, onion, and jalapenos.
3.In a large bowl, whisk together cornmeal, flour, baking powder, soda, and salt. Stir the egg mixture into the dry ingredients. Mix well. Pour batter into prepared pan. Sprinkle remaining 1/2 cup cheese on top.
4.Bake for 30 to 35 minutes until center is set and top is golden brown.

The absolute same Mexican cornbread recipe, but we cook a lb of ground beef in taco seasonings, pour half the batter in, then the cooked taco meat, then the rest of the batter. 1 skillet supper. Reheats well too.

Ground Game Chili

ground venison/wild pork/wild pork country sausage
chili spices
tomatos
onions
garlic
corn
kidney beans
corn bread

start the cornbread cooking
sautee the onions and garlic
brown the meat
add seasonings to taste
make fresh tomato sauce with tomatos, basil, cilantro
add the tomato sauce to the pot
simmer for 20 minutes
get the cornbread out of the oven
add corn and beans for five minutes
serve and top sour cream and cheese
mix in tapatio sauce for extra sweet heat

Takes about 30 minutes start to finish. Great with Sam Adams Boston Lager or Summer Ale.

I don't have a recipe, but that is what I used to have at Panera Bread stores when it was cold and I was out - and when I lived anywhere near a Panera!

You can substitute chili for the corn chowder, but it just isn't the same.

You can substitute chili for the corn chowder, but it just isn't the same.

My Corn Chowder recipe :
In a Crock pot
1/3 fill with diced Potato's
2 large onions chopped
2cans of cream style sweet corn
1/4 pound of chopped reduced salt pork
fill remaining space with whole kernel sweet corn
cover ingredients with water
cook on high 4 -6 hours stirring occasionally
Add 1/2 sweetened condensed milk
Stir and serve

I'm getting warmer already,... ;D

Actually 1/4 cup Sugar
           1/3 cup Apple Cider Vinegar
           2 or 3 green onions chopped fine
           2 cans of Great Northern Beans mostly drained
           S+P

Mix well, cover and stick in fridge for a while. It's really good. I guess the bean snobs can soak overnight, do the simmer thing.

My wife does that with black beans.

Game chili or just Red meat chili, this is not my recipe but a former Terlingua chili cook off winner. It always works. Following it to the letter is not necessary, but the adding of the spices at different times does work better than dumping everything in at once. Supposedly based on Bess Trumans recipe, so this is a presidential recipe of sorts, not from Texas but Missouri. It is still a very good recipe.


Gray 3 pounds of cubed beef chuck tender (or chili grind) in 1 TBSP Crisco

Add
1 Can - 8 oz Hunt's Tomato Sauce
1/2 Can - 14-1/2 oz can Swanson Chicken Broth
1/2 tsp - Cayenne Pepper
2 tsp - Wylers Chicken Instant Bouillon
1 tbsp - Pendery's Fort Worth Light Chili Powder
2 - Serrano Pepper (seeded)
1 Can - 14-1/2 oz Swanson Beef Broth
1-1/2 tbsp - Onion Powder
2 tsp - Wyler Beef Instant Bouillon
1 tsp - Pendery's Cumin

Bring to a boil and cook for about 1 hour (depends on whether you are using cubed or ground meat). Remove the peppers and add the following:

3/4 tsp - Pendery's White Pepper
1 Packet - Sazon Goya
1/4 tsp - Salt
3 tbsp - Gunpowder Foods Texas Red Chili Powder
1 tsp - Garlic Powder
1 tbsp - Pendery's Cumin
2 tbsp - Pendery's Fort Worth Light Chili Powder

Adjust liquid with remainder of chicken broth or water. Cover and cook for 30 minutes. Add the following:

1/4 tsp - Brown Sugar
1 tbsp - Pendery's Fort Worth Light Chili Powder
1/4 tsp - Gunpowder Foods Hot Stuff
1 tsp - Pendery's Cumin

Reduce heat and simmer/cook for 10 to 15 minutes. Adjust chili final taste for salt and front and back heat.


I use the chili powders and spices available on the Mexican food aisle, Fiesta and Cyclone brand mostly. I double the serrano peppers, but don't seed them, just let them float, for extra heat, pure cayenne powder until you get how hot you want. I do find that cutting your own beef, Mock tender chuck, or just buy a chuck roast is cheap and excellent.

Oh the Sazon Goya, seasoning made by the Goya company, does contain MSG, but most of the cook off winners use it.  intensifies the flavors just before going to the judges.

I made chili yesterday at work, because a co worker brought some venison, it got tender way faster than normal, I found out today, that his dad had the entire venison made into chili grind, so was probably back strap venison, primo as far as venison chili go's. Would rather have had it in medallions or butterfly for chicken fried venison steak. uhhhhhhhhm.

M25, The problem with that recipe is there aren't any peppers in it.  Just chili powder (which is IMHO an abomination).

Actually Haz there are 2 serrano peppers in there.  You need new trifocals or something, apparently.   ;D

Take a bone in ham.. after you eat most of the ham.. take the bone with all the fat trimmings and rind and chunks of meat and put it in a big pot.. Take white northern beans.. and black beans and pinto beans and any other kind of lentils you want. ( raw and hard out of a sack)~~ NOT out of a can..... you can mix them or just use the northerns...
anyway.. wash them really good.. put them in your kettle with the ham scraps and bone...Cover with water... add salt and pepper.
cover and let cook slow for about 10 hrs or until beans are tender and soft. ..and the broth from the ham has a reddish rich look.. ( my mouth is watering)

Here is the sour cream cornbread recipe that I like... I cook by feel but these measurements should be close.
 
1/2 cup flour
1 1/2 cup cornmeal
2 teasp. Baking powder
1/2 teasp salt
2 egg, beaten
1 cup (8 oz) sour cream
3/4 cup or a little more milk
3 tablespoons butter (melted)
 
Mix everything together...I put  about 4 tablespoons bacon grease in my big cast iron skillet  and heat it up...then I pour all the batter in on top of the bacon grease and put the overflow of the grease on top of the cornbread...
Makes the top really crusty.
bake at 400 degrees for 20-25 minutes

Or you can  make cornbread like this: take 2 eggs ...buttermilk. add a teaspoon of Soda ( not baking powder) . cornmeal .. salt.. consistency that you want. ( Like a heavy pancake batter)and  add your melted hot bacon grease.. you can crunch up bacon and add to it too if you want..

 put it in a cast iron skillet and bake... thats the way my grandma and mom used to make it...


And THAT my friends is how you make REAL cornbread..
if you want CAKE recipes with sugar.. :P  I'll give you those too..  ;D

I'll say it again and speak very slowly.....

It tastes damn good...... Just have to make sure it is Lucks beans.... they are the best that I have found.
