I take a 15 second pause after the boil and find the water is always in the sweet spot of 190-205 degrees with my instant read thermometer.  Five minute steep but I make about 20 oz per press so it sits and steeps a bit for the second pour.  It’s a bit sludgy but I don’t mind!

I use both. I put the paper filter in the reusable.
What grounds get out of the paper one get caught in the 2nd one.
It sounds reasonable to use both of them. Thanks for advice!
