Poppy seed chicken casserole tonight, along with cabbage, butter beans, and southern-style cornbread.


The chicken dish is really easy to throw together just few ingredients.

Poppy Seed Chicken Casserole

Ingredients
4 skinless, boneless chicken breast halves
1/2 cup butter, melted
1 sleeve of Ritz crackers, crushed
1 teaspoon poppy seeds, or more if desired
1 (8 ounce) container sour cream
1 (10.75 ounce) can condensed cream of chicken soup
2 cups shredded Cheddar cheese (or you can use the cheese of your choice)

Directions
-Boil the chicken, drain the water, then shred the chicken
-Preheat an oven to 350°
-Combine the butter, crackers, and poppy seeds in a bowl and set aside
-Blend the sour cream and cream of chicken soup in a bowl
-Pour half of the soup mixture into a 9x9 inch baking dish
-Add the shredded chicken and pour the remaining half of the soup mixture on top.
-Sprinkle with Cheddar cheese, then top with the cracker mixture.

Bake in the preheated oven until cheese has melted and the sauce is bubbly, 25 to 30 minutes.

Those jalapeno poppers were TGI Fridays brand that I got on sale at Kroger, and I really liked them. They had a sale on Bagel Bites and TGI Fridays appetizers too, maybe 2 weeks ago. The Bagel Bites were on sale for $4.99, $1.00 off, and the TGI Fridays appetizers were $4.99, $.50 off. Then they took another $1.00 e coupon off each one, limit 5 packages of each kind. I saved $11.50 off of my 7 packages, then submitted my receipt to savingstar.com. They gave me a rebate for another $5.00 off because the price of all 7 totaled over $20.00. That works out to about $3.28 for each package, instead of $5.99 for the Bagel Bites and $5.49 for the TGI Fridays appetizers. $22.93 total instead of $39.43, or about 42% off. Today I bought 99 more things and only paid full price for a gallon of milk.

I just ate a chicken breast stuffed with broccoli and Swiss cheese, and now I'm having one stuffed with Brie, apples, and cranberries. This is my breakfast. There were 2 chicken breasts in each box and I bought one of each yesterday. I baked all 4 at once today, and can have the other 2 for lunch. I had pepperoni and cheese Bagel Bites. I thought I liked them a long time ago, but they really aren't very good. It was a family size box so I have eat more later. The best part of the meal was washing it down with ice cold Stok cold brew coffee. Instead of using hot water, they use cool water with more coffee beans for a given amount, and let it steep for at least 10 hours. I love it. I had garlic bread with slices of fresh mozzarella cheese on it. I may put spaghetti sauce on it too when I eat the rest.

I did put spaghetti sauce on the rest of the garlic bread with the remainder of the cheese for lunch. I have to use that sauce yet again or end up throwing some away. Fresh mozzarella is nothing at all like the low-moisture stuff that I'm used to. It has so much moisture that it's just a soft white soaking wet ball. I microwaved 2 slices of the garlic bread 30 seconds too long and the cheese didn't just melt, it liquefied and turned soupy. It looked like melted ricotta and sauce mixing together.

I just microwaved a Fillin’ Philly Cheesesteak flavor Hungry-Man Hand-Fulls. They're like Hot Pockets only twice as big, and this flavor is jut over 600 calories apiece. I never had them before but this one should be cooled off enough to eat now.
