Good stuff....man, I love those onions.......

As a side note, we also grow them outside Vidalia (there's only 20 counties that grow them). It has to be under strict contract with only a certain soil type appropriate to get them to be flavored the way they are. They grow a sweet onion here in my county, called Tifton Sweets that come from Vidalia seed stock.

I had to use one in potato salad for a cookout yesterday, but the other is going into sandwiches  ;D

Y'all makin' me hungry.........throw a little mustard and dill pickles on there with the mayo and onion and yum.  :D

I go through at least five pounds weekly when there in season.  I don't buy anything but Vidalias this time of year...they keep really well too.  Wrap them in paper towel and keep em in the refer, they will hold for a couple of weeks.  Most don't last more than a few days though......they get eaten..... ;D

To preserve Vidalia Onions for a longer period of time, wrap them separately in paper towels and refrigerate.

Vidalia Onions can also be successfully stored in the legs of clean, sheer pantyhose with a knot tied between each one. Hang in a cool, dry, well-ventilated place. Keep Vidalia Onions cool and dry at all times.
