Haven't done it in quite awhile, but making your own jerky can be a satisfying experience. Simple to do and you don't need an expensive dehydrator. Start with a cheap cut of meat like a chuck roast or flank steak and slice it thin. Then brine it in a mix of soy sauce and sugar (Kikkoman's teriyaki sauce works) for a few hours. After that, lay the strips on a cookie sheet and stick 'em in a barely warm oven for a couple of hours (the thickness of the slices will dictate how long it takes--thinner is better). You can tell they're done when they feel and taste like jerky. After that treatment you can put 'em in a Ziplock and keep 'em for quite awhile. I suppose sticking them in a vacuum bag and in the freezer would enhance their staying power. I don't know how long they might last because mine all got eaten within the first couple of weeks. You can add a variety of pepper (red or black) to the brine improve the final flavor. If you're watching your blood pressure, be aware that these morsals have a lot of salt.
