I suspect the reason they don't are twofold. First, if there are liability issues. If somebody figures out how to make something full-auto by watching the show, they stand a VERY good chance of having one of those anal exams the BATFE is known for. And if somebody tries to duplicate something they see and it fails causing injury, they'll get sued from here to the end of time.
He actually mentioned that in one episode....as he was instructing the camera crew that they couldn't film the next step he was about to perform on a full auto weapon....citing liability issues and something along the lines of redneck engineers.
