Lunch was a BLT with onion rings...... and now a small slice of chocolate cake with chocolate buttercream frosting. Wife made a cake for someone and had spare batter so we got a tiny cake to munch on.

We just finished having carnitas tacos with kimchi. Omg they were so good. We also ordered carne asada fries with extra guacamole

Went to a new place here called Cue n Brew with my daughter, I had a brisket sandwich and she had a smoked turkey slider, Was very good, will go there again.

Had a big Tex-Mex chicken/steak/shrimp combo burrito last night at our favorite joint.
I didn't have much of an appetite today so I had cheesecake for lunch and am having a bowl of sausage dip and chips for supper.

Would you like to share the recipe with the rest of us? My friend's wife makes a veggie dip with chipped beef and cream cheese, but sausage dip sounds a lot better to me.

I drained a can of mixed greens and put them in the leftover juice from my Italian beef. Hours later I put the greens on a plate, poured off the excess juice, and covered them with lots of cheese. Then I microwaved it. For the first can of greens I used up the rest of my mozzarella cheese. It tasted something like vegetable lasagna -- edible, but not not something I'd really recommend. For the second can of greens, I used horseradish cheese because that was the only kind in the fridge. I think I have something a lot better in the freezer, like pepper jack, but that's what was thawed out. It was really cheesy, but tasted kind of, meh. I forgot that I ate 2 snausage, egg, and cheese croissants after that. I'm going to put a bunch on boneless zings in the microwave in a few minutes. I'm tired of hearing grumbling from my stomach. That's right, grumbling, not just rumbling. You should hear the complaints!  :)

It's a difficult recipe......  ;)  ;)

1 pound of ground sausage (we use mild but you can use whatever you prefer)
1 can of Rotel
1 block (16 oz) of cream cheese

Brown the sausage and then add the Rotel and cheese.....and that's it. We use tortilla scoops to dip it, but I have put the stuff in a burrito with lettuce and cheddar cheese.

You can easily modify the base recipe by adding different cheeses or onions, peppers etc. but we pretty much just go with the above version.

I'm having 2 sausage, egg and cheese croissants. I like these better than English muffins by a long shot, but my arteries may not like it.

Before that I ate 2 10 ounce Angus rib-eye steaks. You could tell by looking at the steaks after they were cooked how well they were marbled. Where the fat melted away, they had kind of a mesh or net-like appearance, instead of solid unbroken muscle. Except for one bit I had to spit out from each steak, they were oh, so tender. You barely need teeth to chew a steak like that. I need to see what else is in the freezer.
