Chicken Enchiladas? I think

1/2 large onion sliced thin into strips
1 red pepper and one green pepper sliced into strips same as onion
Put peppers and onion into fry pan w/ about 1/8 cup vegetable oil. Saute for about 3-5 min until hot but not quite tender.
Take 1 and 1/2 to 2 boneless skinless chicken breasts and grill until fully cooked.
Alternatively I have also used a roast which I shredded with a fork
Slice/ chop/ tear apart chicken into bite size pieces and put into small/medium saucepan.
Now pour into saucepan w/ chicken one small can of old el paso enchilada sauce. Simmer for about 3-4 min.
In the meantime cook one package of lipton spainish rice.
Use mission brand jalapeno and cheddar wrap tortillas
 
Put mexican mix cheese, sour cream, and guacamole on wrap. next put in some rice. next your sauteed veggies, and finally your chicken.
Wrap up and enjoy.
