$4 a lb for turkey

he's saying pasture raised, heritage turkeys (red bourbon?)  could bring $4 a lb

really?

looking at some numbers he could make some moneys at this price but I'd hate to eat a ton of turkey all year

Store-bought frozen turkeys have been selling around here for 45-58 cents a pound. He needs to make damn sure of his market before making the investment, I would think.

Know your market.

If the birds are bringing that at a local farmers' market, or through private sale - GREAT!

What is his cost of production?  We did some Bronze Breasted a few years ago.  They grow like crazy and are really tasty!  The first month was indoors on poultry feed, then we went to semi-free range, and at about ten weeks they were any where they wanted to go.

While they were free range, grazing and insect eating, I did keep a feeder with poultry feed available for them.  They didn't eat much, but some.

I can't remember costs (being fairly anal about the numbers I figured it to the tenth of a cent per pound).  It was higher than regular grocery, astronomic compared to Wally World loss leader $0.34/lb, but it had a flavor you couldn't beat.  Also, they are lean, so brine is mandatory, but that just means more and more flavor.  I brined and smoked a 50 lb dressed bird  

Beware:  Mature birds + free range in you yard = piles as big as a large cat if you get what I mean  

Keep those kids growing and learning!  It appears you have this responsible parenting thing figured out.

A game warden was driving down the road when he came upon a young boy carrying a wild turkey under his arm.

I've seen "chickens" sell for alot more in the right market.

Thats going to be the key, finding the right market.  You will have to find a place where the demand is high, but the supply is way low.

This may seem strange, but if you are the only one in the area selling them, you want to keep your prices down and your quality high.  Yes it means you will make less, but it also means you won't have every body getting in on your biz.  1+1=2 if other people see you making the 2, it won't be long until 1+1+1+1+1= 2  if you understand what I'm trying to say.

Personally I'm not a big Turkey fan. Melanie made a ton of Shish Kabob today. For me it tasted a hell of a lot better. Eating a big Thanksgiving Turkey dinner is like trying to digest lead.    Bill T.

If you could make a turkey that has crackling like pork it would be a winner! Just saying!!

People will pay one heckuvalot for anything that  has "heritage" attached to it...  I've seen "heritage" tomatoes selling for triple the price of locally grown.  Still, with turkey (any size) in LA selling for $5 each (if you make a $20 purchase at Ralph's) and $0.59/lb here in Florida without a purchase requirement, you're going to have to make a helluva presentation to get $4/lb for any gobbler.

By the way, Bunny and I had one of thse $0.59/lb fowl cooked up by Haz just a few hours ago.  Be hard to beat that for flavor.  And for $4/lb, I wouldn't even try.
