Best Elk I ever had was in Edinburgh, Scotland at the Caledonian Hotel....It made Filet Mignon, look like McDonalds...

It melted in your mouth, and was drizzled in a reduced demi-glaze shallot, truffle, and red wine sauce...It was a culinary orgasm..

Thank God Dad was paying,...but I have yet to have one that good. Buckshot, feel free to send me a sample, so I can attempt a duplicate... ;)

Or perhaps some jerky? 8)

I must admit that the only time I've had elk I believe it wasn't hung properly or possibly someone punctured the bladder.  Tasted like ammonia to me.  It wasn't the backstrap either.

Any help?

Its why you don't shoot bulls during the rut. If you want antlers fine. But meat, no way. The bulls stop eating, produce all sorts of phermones, roll in their own piss etc. Not the best meat out there no matter what you do. Hunt pre-rut or target cows and spikes with an antlerless tag.

Not my hunt.  A friend paid an enormous sum of money for an out of state hunt in Colorado or Wyoming years ago.  The meat had been processed and shipped back to Michigan.

Personally, I have no interest in hunting in the west anymore.  I'm too lame to hump through the mountains.  I'm content to wander the fields here in the NE for pheasant, quail and the occasional tree rat.  Besides, it's open season for crows!   ;D

Elk done up right, shot placement, cleaned and time to age and not over cooked... is every bit as good as beef IMHO.
