The least expensive , least labor intensive, and generally simplest method is to rely on "Shanks" mare.  ;D

Prepared correctly, a horse can supply the nutrition needs for several people for quite awhile.  Initially, steaks and roasts are quite tasty, while horse jerky and potted horse meat can provide nourishment down the road.  Same thing can be said for cats (sorry, Haz) and dogs.  And that's a good deal more than can be said about the F-150 mentioned above.

The time and energy needed to properly care for a horse will, in my humble opinion, be better spent in seeking out Mormons and stealing their food.

A horse is a lifestyle not a mode of transportation, you ain't gonna be Tom Mix no matter how big a hat you buy. Yes you can learn to ride and yes you can learn to use a horse to haul stuff, but saddle, mount and go is for city-slickers how pay a lot of money to the guy doing all the work. I have learned just enough about horses to know how much work they are to keep alive and healthy.

Good luck though, if you pull it off you are a better man than I.
