Thanks guys! All of this footage is from a one-night show so there are some songs with clams in them (bloopers, bad notes, etc.) Trying to sort through and get the best stuff.

Bill...there are a few of things going on. First, the hardest music (I think) is Dixie Dreggs or anything that is jazzier, or stuff like Queen, Foreigner, Kansas, etc. or precision stuff like Skynard.
ZZ Top has some difficulty to it but it is in Billy Gibbons' technique in the studio. He is a master of "finger feel"- making the strings ring the way you want them to. Live, they just bash their way through everything and if you're watching it that's what you see.
Another aspect to being a great player is to play everything efficiently, which makes it look like your hands aren't moving as much.
Lastly, for this conversation, is virtuosity. Some stuff is just too hard to play because the original guitarist is just so damned accomplished. I'm thinking Steve Morse, SRV, Joe Bonamassa, Eric Johnson, Joe Satriani....they can just play more and better than anyone else.
