I like my coffee strong, black, and bitter, just like my women.  ;D  JK.

I just finished half a pot of Gevalia Stockholm roast. It's halfway between regular and dark roast. Mmm. Most days by the time I get out of bed I figure it's too late for coffee, so it was the first time I had any coffee all month. I feel better than I did before. I may even get some work done today.

Reason coffee is bitter can be: dirty coffee maker, over roasted coffee, boiling coffee.
Reason coffee sinks to bottom of pot/cup: grounds get saturated with water and sink.  Try putting boiling water in a cup and add 1 tablespoon of coffee and let it sit for about a minute or so.  The grounds will rise to the top of the cup and then will sink when saturated with water. 

Nothing like a cold morning on a hunt with coffee boiling in a pot over a camp fire.  Adding sugar or milk to coffee is like ruining good whiskey with a mixer (coke or whatever).
