I added a few more options.  All deserve consideration.  Some more than others.

I just don't think you can beat a 12 gauge, but I do love my .357's

Had to jump on the 12g bandwagon.  It does everything, in my opinion, defensive, offensive, hunting, stand-off.  And with so many ammunition varieties around it can fill most roles needed.  If I new what task lay before me I might choose a different option, but is someone woke me up in the middle of the night and said we have to get the hell outta here, the tactical 12g is what I'd grab.  Others may be better at their specific task, but if I could just have one, your 12g is the best bet.  Now if I had to choose which 12g round I would only carry, that's hard one. ;D

I've got both, but If I could only have one it would be the .357, kind of hard to conceal a 12 ga. And as Tim pointed out, more ammo in less weight and space.

My question is, why .357 over another pistol caliber?  If you could just carry one, why not go with .45 ACP or auto loading round, just for arguments sake. ;D

Doesn't have the range that you get with .357 mag or the versitility of switching down to 38's.

Why are we talking conceal?  I got the idea it was "lets go, bring ONE gun".

I choose 12 Ga as the "all hells broken out and zombies are afoot" gun. In a scenario where I may have to occasionally blend in with the populace, I'll take a 4inch .357. It is probably the most versatile gun out there. It makes a good defense gun and is powerful enough to also take deer-sized game. The Smith 619 or 620 is Sheriff Jim Wilson's choice for the same reason. 12 GA is good for when you absolutely have to stop someone's butt NOW!
