roasted veggies...  then when it comes the next day... you chop every thing up, put it on a roll, add cheese, then 1 min under the broiler...
I always break all the clay pigeons,  some times its even with lead.

Pegs got a good idea, I think corn on the cob, cooked in the husk after soaking in water for a couple of minutes, with lime/cilantro butter slathered on the corn and then the husk pulled back up to cover, broil them or cook in the oven, not boiled of course. fresh corn reheats well. Next a sweet salad to offset the spicy jerked seasonings, a spinach or young green salad with mandarin oranges ( canned is fine ) with some finely shredded white cheese, and your choice of dressings. Of course avocado is a natural heat dissipator, used in the salad, or guacamole on the side, or even just as slices. Melon soup, or a melon cup, with other fresh fruit and a little lime, you got fresh Key limes so why not?

+10 on the corn. Its summer time and its hard to beat FL sweet corn. I don't like Wally World much but they do buy local (Duda Farms) produce. Rather than grilling I broil. Get a baking sheet (covered with foil for easy cleanup) and put it on a middle rack. Throw in a a half stick of butter sliced until it melts and gets hot. Add your corn, turning as necessary to add a light browning (carmelized for sweetnes, not dried out). It takes 30-45 minutes. Darn good and you can keep it warm under foil (out of the butter of course) if you need to.

Here's a side dish that goes with about anything, BBQ, chicken, steak, etc.........

Baked Potato Casserole

You can use fresh mashed potatoes, instant, or leftovers....I've also used hash-browns.
Fry up some bacon, let set, and than crumble to make bacon bits.

Spread potatoes in a casserole dish about 1/2 inch thick, and even.
Spread 2 tbs of melted butter over potatoes and sprinkle just a little salt and pepper
Spread a thin layer of sour cream on top of that.
Sprinkle bacon bits over that.
Add a thin layer of cheddar cheese (or your favorite, I use four cheese Mexican)
Do it all over again until you have two layers of everything.

Since everything is already cooked, heat in oven at 300-350 degrees until the cheese is melted.
