Any Of You Having To Cook Today?

I am relegated to frying the turkey today.  Thankfully just the turkey.

Except for the bacon and eggs I'm fixing to fry up.....

I love too cook.  Sadly this year it is just for me.   Sarah is with here family and I had too much on my plate with work.

I have 4 contracts too get done by the end of the month...  2 are ada compliance reports.  Which are always a pita as Iknow they can(and almost always are) used in big $$$ court cases.   No one calls me before they get sued.   
I always break all the clay pigeons,  some times its even with lead.

Cooked the cornbread (four batches) last night..... had to have a big pan ready for the d-i-l to carry to the fire dept where our younger son is on duty for Thanksgiving.

Waiting on the final minutes of the bird to finish.


Switched to an oil-less fryer last Thanksgiving and it is the way to go. I got tired of frying a $10 turkey in $50 worth of oil. It's already paid for itself in oil savings.
The skin is just as crunchy, but I think the meat is actually juicier than oil frying. (YMMV)

My mom is at my brother's house today so I'm eating all alone. I got a sliced smoked turkey breast from the honeybaked ham store. Not much glaze on it but it's enough to taste. It's delicious but not really worth it IMO. I never regret buying one of their hams and seriously thought about getting that instead. I've been eating turkey sandwiches for a couple of days and will have more today. I have some sharp cheddar cheese spread to go on them too. Nothing fancy for me.

Instead of eggs I went with grits.  Then I had to cook more bacon and grits for the wife.

Turkey is going to hit the fryer here around 3 PM.

Peg I have wondered about the oiless fryers...
