Mmm. I really like red beans and rice. Back when I was married I made a batch, maybe around Thanksgiving, and gave some to my mother-in-law. She liked it so much she didn't want anything else for Christmas every year from then on. I don't like making it though. I spend hours getting everything together, dicing this, chopping that, and actually cooking it. I put ham in mine, and if I use any kind other than Honeybaked brand, I have to cut the amount of salt the recipe calls for in half. I actually prefer both ham and sausage in it, but haven't seen good Andouille at my local grocery stores. Gordons Food Service used to have it but I haven't checked there for it in years. And I don't want to order it online.

I ate the rest of my hash brown casserole. I might have some cereal in a while.

I'm on my second of 2 pulled pork barbecue sandwiches. I put about 4 ounces of meat and 2 Sargento Blends 4 Cheese Southwest Slices on each one. "Soft, creamy texture of Monterey Jack cheese blends with Chipotle Cheddar, Colby, and Pepper Jack cheeses to make your cheeseburgers exceptional and your flatbreads fantastic." And I finally cracked open a jar of Famous Dave's Signature Spicy "Hell Fire" Pickle Chips that have been chilling since last month. Yummy. But there's no way I'm buying the Devil's Spit Pickle Chips. My taste buds have their limits, and I wouldn't do that to my "best buds". http://famousbbq.com/products/pickles

Yesterday I ate the same thing as the day before. I still had half a package of buns left and ate 2 beef barbacoa sandwiches today. The meat was already cooked and only needed to be heated, shredded, and reheated. I put 2 slices of cheese on the buns first so all the juice wouldn't soak right through, and microwaved them for another minute. The combination of chipotle and ancho chili peppers and other spices was really good.
