Pork Chops with Rice and Tomatoes

As I looked at a package of loin chops and thinking about the grill, I got an urge for an old favorite:

Get out the heavy iron (all good recipes start this way), brown the pork chops in butter with just a touch of olive oil;
Put a thick slice of onion on top of each chop, cover each chop with dry minute rice, pour on diced canned tomatoes, and add water equal to the amount of rice (one cup for one cup, etc.).

Set on your smallest burner, and a very low simmer for 1/2 - 3/4 hour.  Just enough time for the rice to become fully tender.  The rice will also pick up a nice bronze to brown color from the butter and drippings from the chops.

I finished the first pork loin today and started on the second one. I think it was about 38 ounces of meat altogether. I like it better with just a little bit of Grey Poupon. It looks like I'll finish the potatoes tonight. They don't taste nearly as salty as the big spoonful I scraped off of the pot. Maybe the water boiled out of the sauce around the sides of the pot and concentrated the salt there. ??? Just a guess.

Going to grill some burgers tonight, but this noon was a little left over moose - Moose tenders, with fried onions and mushrooms on toasted homemade bread.

Never understood why anyone would want to cover up the flavor of a good piece of meat with onions, peppers or mushrooms... ??? ??? The same with covering a good steak with steak sauce. Just my opinion, But then again,I'm allergic to onions, peppers and mushrooms... :-[ :-[ ::)

While microwaving a bowl of ramen soup I diced up the last of my pork loin then stirred it in when the soup was done. The first bowl I grabbed out of the cupboard was beef ramen and the second was chicken. I thought the chicken flavor would overpower the pork and I know I don't have pork flavor so I used the beef. It actually tastes pretty good. One pork loin had caraway seeds on it but I don't taste any in my soup yet.

It isn't covering, it is eating along with.  When done correctly, you still taste the full meat.  When I made this there was a wine sauce that went with it.  Just a 1/2 cup or so.  It was the butter and oil the onions and mushrooms were browned in, a little wine, all reduced, and all the drippings from the pan the tenders were browned and oven finished in.  On extremely lean  meat the added fat is good, and with this sauce it is all about getting the full meat flavor into the fat you add.

Put some elk, carrots, onions, potatoes, garlic, celery and herbs in the slow cooker about 4 hours ago.  Should be awesome for dinner

Hot Nuts, but this bag wasn't Cajun Hot Nuts. They're good and so are the Hatch Chile flavor. It's been awhile since I had the Dill Pickle flavor but I think I liked those too. There are basically two kinds of peanuts I like, hot spicy peanuts and Planters Sweet ’N Crunchy Peanuts. The Rite Aid brand sucks.

Once, I mail-ordered a plastic mesh bagful of Cajun Creole Hot Nuts that were hotter than these and they were really good. I took them along as a trail snack when I went ATV riding with a couple of friends. One time when I cracked one or two open, threw away the shells, and popped the peanuts into my mouth, I slapped really hot peanut dust right in my eyes. Maybe the wind blew it off my hand. I had to rinse my eyes out with whatever I was drinking ASAP and I don't think it was water.

I had crunchy coconut shrimp covered with sweet chili sauce for lunch. I have a dozen more in the fridge but only for a few more minutes. Breakfast was Thai coconut & sweet chili shrimp purses that I ate with tamari sauce. If I was a twit I would have twittered #SaturdayShrimpDay and seen if it blew up or was trending or whatever it is twits say about those things. Maybe I could have gotten a bunch of twits to like me or follow me.
