I fry cubed spam with sliced potatoes in butter until browned, then add a drained can of french style green beans with a little more butter and heat through,easy one pan meal.

Meat, taters, and veggies. That's a whole meal. Easy, one pan meals are always a good way to go. Casseroles are how I roll. ;) And even if they're not always great, they're good enough.

I have cans of corned beef hash in the cupboard, and now I'm wondering if there's any kind of vegetables I could mix with it to make a meal, instead of frying up eggs to eat with it. I haven't thought of anything yet that sounds good.

I fried up 3 pork chops. I used the last of the spicy Montreal steak seasoning on one side, and garlic-pepper blend on the other side. And I added a little bit of soul seasoning to both sides to make sure I had enough salt on them. I sliced up the long, narrow pork chop and put half in a bowl with a can of Seasoned Smoked Turkey Collard Greens, and half in another bowl with a can of Seasoned Southern Style Red Beans and Rice. I ended up eating all of it. Sleeping until 5 pm must have given me an appetite. :)

The collard greens, and red beans and rice, were both Glory Foods brand. The collard greens aren't as good as fresh greens from the garden, but all the stray cats in the neighborhood won't let me grow them, or anything else. They're not bad for canned. I also like mixed greens and have bought mustard greens, turnip greens, and collard greens and mixed them, instead of buying cans of mixed greens. But, no kale. Why do people even eat that stuff? The red beans and rice are the only kind in a can I've found that are edible. They're nowhere near as good as what I make, but when I make them I spend half a day in the kitchen. I can microwave these in 3 minutes, so it's a trade off I'm willing to make more often than not.

We've some of that brand greens and black-eyed peas in the pantry. Not as good as fresh, but good for store-bought canned stuff.

Had a sandwich last night with left over cubed steak......followed by what I call 'Neapolitan cake' (like the ice cream)...... Wife had cut off cake tops of chocolate, strawberry, and yellow (vanilla) from a giant birthday cake she's making.....a little of each one and some buttercream frosting and Wilford Brimley would approve.

2 8-ounce ranch steaks, medium rare, and German sauerkraut. When I looked in the cupboard to see if I had any vegetables, the only other things I could find were pickles and cans of jalapenos. The sauekraut isn't too sour, and tastes really good. So do the steaks. Ranch steaks are cut across the grain from the Shoulder (Clod) Arm Roast similar to the Shoulder Steak, but not as tough. Visible connective tissue and associated lean must be removed to qualify as a Ranch Steak. Technically it's called a boneless chuck shoulder center cut steak. A ranch steak is usually cut no thicker than one inch, weighs 10 ounces or less, and is usually trimmed of all excess fat. It's flavorful, but will be tough if cooked beyond medium. The second steak, which I'm still eating was thicker and had to be cooked about 2 minutes longer until it started to feel firm enough. I really nailed it on these. The last bite was so tender, I can't believe it came from a muscle that's used so much. The first one had a piece of connective tissue in it I had to spit out, but otherwise tasted great with garlic-pepper-sea salt blend. Entenmann's Limited Edition Little Bites Pumpkin Muffins. Before that, it was a hash. It was a monster hash.

I was looking in the fridge, late last night

I put half a can of leftover corned beef hash in a bowl, covered it with about half a bar of Colby-Jack cheese, mounded browned chorizo over top of that and just for good measure topped that with medium Cheddar cheese and Hot Chi-Chi's Thick & Chunky salsa. Then I microwaved it for several minutes until the cheese melted and ran down into the rest of the ingredients, and I mixed it all up. The combination of cheese, meat, potatoes, and spices tasted good, despite the overdose of cheese.

I had 4 top sirloin steaks coming up to room temperature while I browned 2 pounds of chorizo yesterday, then wiped the pan clean with paper towels and fried the steaks. I have 2 left. I'm either going to eat one now, or slice it up and put half of it in a bowl of Beef Top Ramen. Unlike the ramen bricks, Top Ramen Bowls have veggies, including red bell peppers, green onions, corn and carrots. And each bowl comes with its own unique flavor sauce inside, teriyaki for Chicken, sweet & savory for Beef, and sesame for Soy Sauce. They still have a flavor packet, plus a veggie packet and sauce packet, instead of just a flavor packet that's loaded with salt. I used the last of a big bag of boneless zings in a bowl of chicken ramen a couple of days ago, and split a boneless pork chop between a bowl of chicken and beef ramen before that, too. When I see the ramen bowls on sale cheap enough I buy them so I have something quick to eat late at night, besides milk and cereal. If you have leftover meat to toss in, that makes them a lot better. The ramen is too hot to eat after 3 minutes in the microwave, and throwing a handful of cold meat in doesn't hurt it.

Went to a state park campground for a few days and last night I grilled some angus burgers and hot dogs on my mini Weber kettle grill.
We got back around lunch and I've been junk-fooding all afternoon.

I poured a can of Hormel hot chili with beans in a bowl and filled it to the top with the last of my chorizo. I forgot that I was going to put it on a cheese pizza I have in the freezer, but I can put salame on it instead if I want to. After I microwaved the chili and chorizo, I stirred it up and topped it with cheddar cheese and microwaved it again, then stirred it again. For dessert. I had 2 Gansito (literally "little goose" in Spanish) snack cakes, invented in Mexico 66 years ago.
