Wife, d-i-l, oldest granddaughter and I cooked breakfast for a neighboring county's teacher retiree banquet. A neighbor's brother works for the school system and we had previously cooked for him. They didn't have the funds in the budget to pay the exorbitant quotes they got to cater it and he asked if we could beat the prices. We were able to source food through folks we use to cook for church and beat the best quote by nearly 60%.
We did sausage, egg and cheese casseroles, grits (with cheese available), quiche, cinnamon rolls, yogurt cups with a variety of toppings as well as juice, milk, coffee and tea.
I set my personal record for grits at 12 gallons cooked.

About 200 of the invited 300 showed up (fairly normal turnout).....and the ones who showed ate well.

ALL THAT FOOD...and all I ate was a bowl of grits.....we never eat much when cooking.

Had a double burger later though.
Peanut butter on a slice of bread for lunch and might go out tonight for a nice meal.
