I just had slow roasted beef with au jus (pulled not sliced) and melted Muenster cheese on toasted Hillbilly bread, open-faced, topped with crispy jalapenos. Not bad.

It took until my third sandwich, the only one today, to figure out how to make them so they don't get soggy and fall apart. Plain bread with a slice of cheese didn't work. Neither did toast with cheese only on the bottom. It needs cheese on the top and bottom to "waterproof" the toast. I only ate it open because I poured the last of the au jus on it. Ooh, salty. I shouldn't have done that. But I was still able to pick up each half and eat it as usual, no silverware necessary.

I have scalloped potatoes with cheddar cheese in the microwave now, and will have a few bites before I go back to bed. I know, it's weird to eat, sleep, wake up to eat again, and sleep again. I barely slept Wednesday night and was tired. I have pills I take about every 12 hours and some days I can't stay awake 12 hours straight. Some days 5 hours is a real struggle, and then I get back up later, maybe for a day or two.

My wife bought some sugar free ice cream once by mistake and I ate a bowl one evening.....man, my guts were tore  up for days.

Sugar Free Hershey's chocolate has a reputation as a super-laxative. Some of the comments online about it are funny. I bought some sugar-free candy that says, Sweetened With Splenda. I think Splenda was the last ingredient listed, and therefore the smallest part of the recipe. Too bad since sucralose doesn't seem to to do anything bad to anyone that I know of. The main ingredient was maltitol, which makes up almost whole hard candies. Like other sugar alcohols (with the possible exception of erythritol), maltitol has a laxative effect, causing diarrhea, stomach and bowel sounds, and flatulence. And you should never, ever, EVER trust a fart when you've been eating sugar-free candy. The safest bet is always to sit on the toilet and eliminate the guesswork.

Sriracha Ramen Noodle Soup, Chicken, artificially flavored. A whole bottle of water and several slices of Havarti cheese cut the heat in between mouthfuls. It's made in Vietnam with real Huy Fong Sriracha Sauce, but it's powder. By the way, Huy Fong Foods is an American company that was founded by a Vietnamese-born immigrant. I had a bowl of the Regular Sriracha Ramen Noodle Soup last week and it was hot and spicy. If you like "Rooster Sauce" it's worth trying. The Chicken flavor is hot too, and smells like the south end of a north-facing skunk. Seriously. If I see the Beef or Lobster flavor in the store I'll try one.

P.S. This is no "Cup Noodles". The bowl is 4" high and 5 1/2" wide. It's 2 servings but gives the nutrition information for one serving, and for the whole bowlful. Time to raid the cupboards/freezer to see what else I have to eat.

My dad passed away in 2014 and had suffered for years from what doctors chalked up to his diabetic medications (many do cause gut issues). I figure a large part of his problems were more than likely due, or exacerbated by, his consumption of sugar free crap.

Tonight's menu was smoked turkey sandwich and a few Pringles chips with a diet root beer.

I can make myself a meal of smoked turkey and Pringles and be happy with it. There's your ^%$#@ happy meal. :D I pity the fool who doesn't like Mr. P's. Years ago I had diet ICB root beer and liked it quite a bit, but I prefer birch beer or sarsaparilla if I can find it, but neither are diet.

I put some Jalapeño & Cheddar Beef Snack Sticks and grated Parmesan and Romano cheese on a slice of bread amd warmed it up for half a minute in the microwave. It tasted better than it probably sounds, but not as good as the family-sized portion of chicken primavera I ate earlier. I went too long without food before that. My headache came back, s it's time for some more food, alcohol, and overdue sleep.

Stopped by a local guy's food truck today and had an order of wings and fries....I had the sweet/spicy......we try to support locals as much as possible.
