I'm getting ready to have some more fettuccine, beef meatballs and creamy tomato sauce. Giovanni Rana makes good meatballs.

La-la-la-la-lasagna. And drinking Mountain Mules. They're like Moscow Mules, but made with Ole Smokey Tennessee Moonshine. I should have had food first and moonshine second. Mooshine on an empty stomach makes it really hard to type. If my spell checker could talk it would have said, "WTF was that!" A LOT!  ;D

Macaroni and cheese Cheese and macaroni with Hatch green chiles, poblano peppers, and jalapeno peppers. On the salty side but still good stuff.

Not the only one....just the only one eating anything interesting, I reckon.  ;D ;D ;D

I do want to get back into various bread making styles. I was delving into that last year and got sidetracked with other things.

One dinner roll I made lately is a 'quick bread' with no yeast needed. It works like a biscuit but you cook it in a muffin pan. It only has three ingredients as the basic roll and it's good as is....but, I want to experiment with other additives for custom profiles.

Basic soft dinner roll:
2 cups self-rising flour
4 TBS mayonnaise (not Miracle Whip)
1 cup whole milk (more or less)

Add the mayo to the flour and gently start to stir.
Add about 3/4 of the milk and gently fold in trying not to over work it.
Depending on humidity and flour density you may not need all the milk but you may need more than the cup......you're looking for a consistency that is wet enough to be spoon-able but not quite pour-able.
Spoon into greased muffin pan and bake at 350° for 15-20 minutes until golden on top. I guess you could drop them on a cookie sheet or skillet like drop biscuits as well, but have not tried it yet.
When done, brushing with butter is optional but adds extra flavor (here's where a good compound butter would work too).

I made tempura shrimp tacos last night and I made my own green salsa. Omg it was good. I also made red snapper tacos🤤🤤

I had a recipe for carne asada fries but can't find it.

While looking for it I found a picture but no recipe of Chorizo and Scrambled Egg Breakfast Tacos. That sounds better than fish tacos to me, but I like shrimp.

I need to eat and go to bed but don't know what I'm going to eat.

Went to our favorite Mexican restaurant last night and had chicken alambre...wife had chicken fajitas. There's not a lot of difference between the two except serving style.

I never heard of alambre before so I searched and it came up at Wikipedia. They showed beef alambre barbecuing on skewers, and a plateful of some kind ready to eat. It looks good to me.

I bought a bunch of Hostess cakes and pies that were 99 cents off a box. I'm going to grab some and watch TV in bed.
