Hi, Red. Long time no see. Or hear. I didn't know that clam chowder was ever good. ;)

I made my biggest hash brown patty yet. It was the last one from 3 pounds of shredded hash browns, and bigger than the other 3 because I didn't quite divide the potatoes evenly. This time I added 20 or more slices of hot jalapenos to the pound of sausage gravy and heated it up before I started cooking the hash browns. I wanted the peppers to have time to marinate in the gravy. After I flipped it over, I added all of the French's fried onions I had left, and covered it with 6 slices of cheese, 2 layers thick. The patty was so thick, the heat wasn't making its way through and melting the cheese. I was afraid of burning it and took it out of the pan and microwaved it for 1 1/2 minutes, and the cheese still wasn't melted. This thing was so big, if I poured the gravy on top, most of it would overflow. So I cut the middle out with a spatula, messing things up a bit in the process, and put it on another plate. I covered it with about half of the gravy, and filled the hole in this part with the rest. I ended up taking a few spoonfuls of gravy off the other part to finish this one, and will eat the other part later.

I like to fry my hash browns in butter.  First I will dice some onion and tomato and mix together and cook them until the onion softens a bit...but not enough to clarify it.  Then I take that mix out and put in the hash browns on low heat.

After flipping the hash browns a couple of times I turn up the heat and maybe add a little butter to brown and crisp them...that's when the onion and tomato go in with some diced jalapeno.  I fry that side up well and then flip and add cheese to the top for maybe a 1/2 a minute or so.  A few dashes of Tabasco and it's ready-to-eat.

I'm eating part 2 of my hash brown patty. This is a pic from before t went in the fridge. It tastes better than it looks. Breakfast was a bowl of trail mix. The hash brown was lunch and now it's dinner at 5:30 in the morning. I slept for awhile and will be going back to bed, hopefully before it gets too light out.

Younger son got fed up trying to mount a new motor on one of the tillers Saturday afternoon and went fishing with the older son. (Meanwhile I came in from errands and in less than 30 mins had the motor on and idling to break it in....old age and experience, eh?).

We came in from Sunday Meetin' and they were frying up the previous day's catch in the big frying kettle.
We had some bass, bream and jack....been years since I'd had some jack fish, along with seasoned fries, fried pickles and jalapenos and banana peppers.

Later came a slice of peanut butter pie.  :D

The last time I went to the doctor I stopped at Gordons and they had Gyro Kits on sale. Each one makes 4 sandwiches, and I bought a 12 ounce bag of Gyro meat on sale, too. So I ate 2 gyros today with about an extra ounce and a half of meat on each one. I only have 2 left and maybe 3 ounces of extra meat. With all that meat and no veggies, the sandwiches were drier than normal and there wasn't enough tzatziki sauce to make up for it. So I poured a little buttermilk ranch dressing right over the tzatziki sauce. It tasted good, and not like ranch dressing. I only ate once today and may finish the last 2 a little later.

Just finished our usual Tuesday night supper when the middle granddaughter is here: Air fried chicken legs with mac & cheese......

I won't mention the slice o' peanut butter pie though........  ;D

;D There was a restaurant on the other side of the city that made really good pies, including peanut butter, and turtle pie, but they closed or changed their name several years ago. I don't know what's there now.

I had my last 2 pretzel buns with hot beef polish sausage and the lat of my kimchi for breakfast. I'm going to have more snausages on hotdog buns soon.
